The Waldorf Astoria Los Cabos Pedregal resort in Cabo San Lucas is set to debut several restaurants this year: The open-air Agave Study at Peacock Alley pairs agave spirits with local dishes from Mexican purveyors. The signature restaurant, Don Manuel’s, will be redesigned to spotlight Travesía, a nine-course tasting menu surrounding tacos. Nine rounds of tacos! The dream of my life!
